Recently I’ve been trying to learn to use my oven’s broiler setting. You see, up until now I’ve been flat out afraid of it. Afraid of charred, unrecognizable and mostly inedible food! I mean, is there anything worse than taking the time to prepare something just to end up ruining it because you forgot to pay attention and it ends up looking like a charcoal briquette? But it seems that I have finally come to my senses. The broiler just needs to be conquered. It perfectly blackens roasted red peppers. It’s how you get that fabulous chewy, browned cheese around the edges of lasagna that we all secretly love. And, it’s how you toast these yummy barbecue chicken french bread pizzas. So, if you’re like me, and need to overcome a broiler phobia, then this is the recipe for you. I mean, who doesn’t love french bread pizza?
Lets ignore for a moment that french bread pizza is really (really!) easy, and that I probably don’t actually need to provide ya’ll with a recipe for it. Yeah, let’s ignore that fact because…you’re getting a recipe anyway. I happen to think that this particular combination of ingredients is just fab, and I’d hate for you to make your own french bread pizza, forget the red onions, and feel a bit dissapointed becaus it only ended up being good instead of fantastic! See? I’ve got your back.
Barbecue Chicken French Bread Pizza

Ingredients (4 servings)
- 2 individual french bread loaves, split
- Olive oil
- salt and pepper
- 1/2 cup BBQ sauce, divided
- 1 chicken breast, sliced thinly
- 1/4 red onion, thinly sliced
- cilantro, roughly chopped
- 1 cup shreaded mozzarella
- crushed red pepper flakes, to taste
Sprinkle chicken breast with salt and pepper, grill until cooked through.
Meanwhile, place french bread slices on a baking sheet. Drizzle with olive oil, and sprinkle with salt and pepper.
Broil until lightly golden. Remove from oven and set aside.
Brush BBQ sauce on toasted bread slices, and sprinkle with the mozzarella cheeze. Layer slices of the grilled chicken on top. Top with sliced red onion, and sprinkle with red pepper flakes.
Return to the broiler, and cook until the cheese is melted.
Remove from the oven and top with the chopped cilantro.
